I'll full on admit it.  Our holiday celebrations were long and drawn out, we traveled around, a bout of sickness hit our youngest {which in turn put me way behind in many areas} and already our kids have a day off of school this Friday.

Did you set any goals for 2019?  Or pick a "word of the year"?  It's super popular to do in January and I'm cool with that.  I think it's good!  Why not have a goal?

I recently had someone ask me, in front of a table of others, "what is your New Year's resolution that you'll break in 5 days?"

Hmm. Interesting.

I'm not sure if the comment was genuine or not, but it did get me thinking.  I didn't want to pick a goal that was super easy to break {like losing 5 pounds by tomorrow}.  Instead I choose to just work on my blog in 2019.

Work on your blog?  I'm sure many of you are already thinking I do that....and I do....but I want to build it, increase my followers, bring you more and use my time on it more wisely.  Like this pasta dish!

I don't know about your family, but we currently have three sports going on between two of our kids.  I need my meals to be planned, intentional and easy.  Recipe #1 fit that bill and recipe #2 certainly fits that bill.  January is a much busier month than many people think.

This year I want to make sure my recipes in 2019 have better timing.  Do I have a great, over-the-top chocolate cake that I'm dying to share?  Yes, I do.  Is it the right time to showcase it?  Probably not.  While we all want to sink our teeth into that decadent splurge, for many of us it's not going to happen.

We just ate ALL THAT STUFF last month.

January is a detox month for many {don't worry I'll bring that cake back around Valentine's Day}.  These first two recipes for the year have been about healthy and ease.

Healthy for obvious reasons and ease for all us Moms who are scrambling through these winter sports while simultaneously trying to feed our humans.

Let me tell you THIS.

I started this recipe at 9:07 a.m. and it was finished by 9:16 a.m.  If you're doing the math that is less than 10 minutes!  And yes, I often make savory, dinner style dishes at odd times of the day for a few reasons.

1 ---- > The natural light is better in the morning in the winter for photography purposes.
2 ---- > It's the time of the day when I have the least amount of people in my house.
3 ---- > I'm weird and cook when I want.

I'll be honest.  I wasn't quite sure if I could tackle this quick dish in just 10 minutes {is that really possible?}, but the sauce is just three main ingredients and the angel hair pasta cooks up super quick.  It can be done!

And let me tell you.....the aroma that fills your house is like angels singing.

I like this quick dish for so many reasons.  You can easily make it a lunch or a dinner.  Kids and adults both love it.  It's made with whole ingredients and healthier whole wheat spaghetti.  It can be fancied up for a more formal dinner by adding a side salad and a hunk of crusty bread.  

Do you want me to keep going?  Because I can.

I love this dish.

Tonight my kids have youth group right after school.  Then once they get home from youth group we have about 45 minutes before the oldest and the husband head off to batting practice for baseball.  Normally, 45 minutes to cook, serve and eat dinner might not be enough time but with this simple dinner it's fine!

More than enough time.

10-Minute Tomato & Garlic Whole Wheat Spaghetti

This simple spaghetti comes together in just 10 minutes and has incredible flavor. Serve with a side salad and dinner is set!
prep time: 3 minscook time: 10 minstotal time: 13 mins

ingredients


  • 8 oz whole wheat angel hair spaghetti
  • 2 T olive oil
  • 4 cloves, garlic minced or crushed
  • 1 heaping tablespoon tomato paste
  • 14.5 oz can petite diced tomatoes
  • 1 t sugar
  • 1/2 t salt
  • 1/2 t pepper
  • 1 t dried basil
  • 1 t dried parsley
  • 1 t dried minced onion
  • fresh, shaved Parmesan cheese

instructions


  1. Bring a large pot of salted water to a boil.  Add pasta and cook for 5-6 minutes or until al dente.
  2. Meanwhile, heat the olive oil in a high rimmed skillet over medium high heat.  Saute the garlic for 30 seconds, just until fragrant but not brown.  Stir in the tomato paste and break up and swirl to combine.
  3. Reduce the heat to low/medium and add in the diced tomatoes and seasonings.
  4. Drain the pasta (do not rinse).  Toss the pasta with the warm tomato sauce, stirring for about a minute to combine.
  5. Divide into 4 bowls and sprinkle with freshly grated Parmesan cheese.

NOTES:

If you want to beef up this dish a bit, try adding some chopped mushrooms or zucchini when sauting the garlic.
