Dark Chocolate & Sea Salt Cookies

I love dark chocolate.

Golly, I hope you do to.  It's such a nice little treasure of greatness in life.  Please tell me your taste buds salivate over it as much as mine do.

I especially love dark chocolate in cookies. Just sweet enough to satisfy that dessert craving. My kids love it {basically because I force fed them it since they were young, so they had no choice}. These cookies went over like a new puppy.  I baked up a batch to take to a friend's house and had a hard time keeping them out of reach from those buggers.

I haven't been baking as much since early March {we went a wee bit overboard during the early stages of quarantine}.  I've been holding back in fear we'd all out grow our Summer clothes, but per usual a few days ago I GOT THE ITCH.

Baking is a bit of a stress releiver for me. When life gets bananas I tend to drop all the to-do lists and just bake something {my banana bread is often the front runner}. Ever since we got back from a short vacay last week I've felt behind.  It's hard to get all the things done with the kids underfoot 24/7!

We've gotten word that our school district will be back up and running coming late August {praise be to Jesus}, but there are still some kinks to get ironed out.  We can only assume things will most definitely be different.

So like I said, when I get busy with life, why not mess up the kitchen and make life even more messy?

Makes complete sense.

But, y'all....these cookies are worth it.  Did you see what makes up the dough?  Butter AND cream cheese.  Both of them.  You don't often see cookies with both, but let me inform you that cream cheese makes for the most pillowy, soft and tender middle, while still allowing for a slighty crisp edge.  I'm not sure how it works but it does.

I also prefer dark chocolate chunks versus the chips when I can find them {found these at ALDI!}, I just feel you get a better bite of chocolate.

And don't forget that sprinkle of sea salt on top before baking {I mean, you can, I'm not the cookie police}, but at least try on half to get that sweet and salty combo.  It's insanely delicious!

Dark Chocolate & Sea Salt Cookies

Dark Chocolate & Sea Salt Cookies

These crunchy on the outside, tender in the middle cookies are loaded with dark chocolate chunks, plus a sprinkle of sea salt on top for the ultimate cookie experience.

Ingredients:

  • 1 cup unsalted butter, softened
  • 4 oz cream cheese, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 t vanilla extract
  • 1 t. baking soda
  • 1/2 t. salt
  • 2 1/4 cup flour
  • 1 cup oats
  • 1 cup dark chocolate chunks, plus add'l for topping
  • 2 T. sea salt

Instructions:

  1. Preheat the oven to 350 degrees.  Lightly grease a cookie sheet and set aside.
  2. In a stand mixer start to combine the softened butter, cream cheese and sugar until incorporated.
  3. Add in the vanilla, eggs, salt and baking soda and combine.
  4. Sift in the flour and once mixed together, add in the oats.
  5. Gently fold in the dark chocolate chunks.
  6. Using a cookie scoop, scoop out a 2 tablespoon size of dough onto the cookie sheet. Gently press in a couple extra dark chocolate chunks and sprinkle with sea salt.
  7. Bake for 12 minutes.  Allow the cookies to cool on a wire rack.  Store in an airtight container for up to 3-4 days.
