Whipped Shortbread Christmas Cookies

This easy holiday cookie comes together with just five ingredients. They are soft and delicious and literally melt in your mouth.


The countdown to Christmas is on!

I always feel behind once my 12 Days of Holiday Giveaways ends. It consumes my mind for close to two weeks, so when it's finally over I feel a bit rushed to get all my normal "at home" stuff done for the holidays.

Shopping, wrapping gifts, grabbing ingredients for cooking making and holiday dinners and honestly most importantly making time for the family. During Christmas break we like to drive around and look at the lights, have a fun dinner together at a restaurant, catch a movie in the theatre and make all kinds of goodies.

It's fun! But also exhausting.

Now....enter in this simple & fun holiday cookie.

I love, love, love shortbread. Always have. It's just barely sweet and melts in your mouth. It's such a classic Christmas cookie.

Yes, there is a LOT of butter involved, but honestly what is a cookie without butter?

All of my favorites have butter!

Over the years I've made so many that you guys have loved and adored. Each year once this time of year rolls around you always remind me again of your favorites!

Sour Cream Sugar Cookies (my Mom's recipe)

These are called "whipped shortbread" cookies because you take the time to really mix (or whip) together the butter and powdered sugar until it gets all fluffy. 

After that there are only three other ingredients! Just flour, vanilla extract and cornstarch. That's it.

Well, I guess don't forget the sprinkles to make them festive, that would make six.....but for "actual" ingredients just five. You can't beat a cookie that is as low maintenance as this one.

It's also a great one to have the kids help with as they will love pushing a fork down into the cookie dough balls to make indents for the sprinkles.

Yep, you shake those sprinkles on before baking into the grooves and they stay! Making the cutest little cookie.

These shortbread cookies will be thick and soft. Perfect in my opinion.

I instantly stuck half of these in the freezer (they will stay good for up to 2 months) and then shared the rest with the family. They are great to pull out of the freezer the night of a holiday gathering to assemble on a cookie tray. Straight from freezer to eating - not an issue!
