We love sushi at our house, but we don't always love the price tag.
This Chicken Sushi Bake gives us a taste of it at home!
I have a teen daughter who loves sushi. Every time I am headed to this certain grocery store (that has a sushi section in their deli) she begs me to bring home a platter of her favorites. Every once in awhile, or if they are having a sale, I will grab a platter to bring home to devour. But more often than not, I won't...as it gets expensive!
In fact 4 out of the 5 of us in this house love sushi. That one other person tolerates it. In an attempt to enjoy it but not break the bank I decided to make my own home version.
And that is where this Chicken Sushi Bake came from!
And yes....I know this is NOT traditional sushi. For one thing, it's baked. But trust me when I say it has all the same flavors and it's so delicious.
This dish could be made with shrimp or crab, but in our house we often have chicken on hand so that is what I used.
White rice, chicken, carrots, cucumbers, a sauce that gives it SO much flavor and my favorite part? Right before serving you drizzle it with a hearty serving of spicy mayo (just like they do on some of our favorite sushi rolls).
It's the best combination.
Every single person in my house loved this dish (even the one who isn't a fan of traditional sushi)....so much so that I had wished I had doubled the batch.
Two teens ate a helping after school. Everyone had it for dinner. And as most teens do, another had a second dinner later that night. That casserole dish was licked clean by bedtime.
This dish has already been requested to become "a staple in our dinner rotation". And I'm okay with that! It's simple to make and can be on the table in under an hour. Which is very important in our house with such busy schedules.
And this one is versatile. Use a different protein (even salmon would work!) or throw in any veggies that you have on hand - peas, broccoli, really anything green.
But definitely add the chopped cucumber at the end. We all agreed those made the dish.
