Cottage Cheese Brownies

There are so many ways to make brownies decadent!

Try my new Cottage Cheese Brownies – they are rich, silky and heavenly.

Cottage Cheese Brownies



If you have a bustling household like us (kids ages 16, 15 and 12) our fridge door gets opened approximately 200 times a day – as EVERYONE IS HUNGRY – at all hours. It’s constant.


As soon as they eat breakfast they are already thinking about lunch. And when that is over, they are asking me what I’m making for dinner. Saying this – I try and keep filling foods on hand, ones they can grab before or after sports workouts to keep them full until the next meal.


So, imagine their surprise when I told them I was going to use their favorite AE Dairy cottage cheese in my next batch of brownies!


They were skeptical. And rightfully so!

Who puts cottage cheese in brownies? I’m fairly certain they thought Mom had lost her mind.


We love AE Dairy’s 4% large curd cottage cheese – and I personally know how great it blends up into other dishes. You’ve seen me do it!


Remember my smoothie bowls? My spinach dip? My homemade pizza bagels? All had a main ingredient of AE Dairy’s delicious cottage cheese.


Made with whole milk, its protein packed (12 grams per ½ cup), creamy and rich.

All wet ingredients get dumped into a blender and blitzed together. Then you fold in the dry ingredients. This makes for a fluffy, light and almost airy brownie batter.


I snuck a bite and it was almost like eating chocolate mousse!

These brownies are also studded with melted dark chocolate, rich cocoa powder and mini chocolate chips – so you can imagine the chocolate factor is ON POINT.


After they bake you let them cool completely (trust me on this, they will cut like a dream once cooled) – and they are the most rich, silky, fudgy brownie you’ll ever lay your hands on.


I couldn’t resist putting a scoop of vanilla ice cream on a piece too – the combo was fantastic.

Not a single soul will ever know that cottage cheese is the secret ingredient in these brownies. It’s your secret to keep or tell!


Per usual my family devoured these. There isn’t a dessert they won’t try. Even if it is different!
