I came across this recipe a couple of years back, as I needed to find something sweet to bring to a family gathering that was gluten free. My husband's family has a couple members that are allergic to all glutens (i.e. wheat, barley, buckwheat, rye, etc.) Because of that they can rarely eat any of the desserts because more often than not they contain flour. If you don't know already flour is in everything! I came upon this recipe online, it looked very simple and only required a few ingredients (woo-hoo!). Even if you don't have a gluten intolerance, these cookies are so easy to make and always get rave reviews....and heck, they are a tad healthier since they have no flour!

Flourless Peanut Butter Chocolate Chip Cookies
1 c. smooth or chunky peanut butter
1 c. brown sugar
1 large egg
1 t. baking soda
1/2 t. vanilla
1 c. mini chocolate chips
Mix first 5 indgredients together and then add chocolate chips. Forms into balls and place on greased cookie sheet. Bake at 350 degrees for 10-12 min. Do not overbake! Makes exactly 2 dozen.
