Fudgy Dark Chocolate Brownies with Peanut Butter Frosting


I got in the mood to bake yesterday and these brownies are what happened.  Pretty great result if I do say so myself.

Have you ever made brownies from scratch?  If not, I strongly suggest you try it. Most if not all the ingredients you probably already have on hand {butter, cocoa, flour, sugar, etc.}. The taste and quality is really good.  

I am not ABOVE using a boxed mixed at all - those mixes have saved me numerous times, I'm just saying if you get the chance to make them homemade you should do it.  You might not go back!


The little man and I were talking peanut butter on the way home from school yesterday morning, as it seems his once classmate that had a peanut allergy moved away, so now we are allowed peanut related items to bring for snack.  Yea!

Nothing against kids with food allergies, I understand they are very serious and that is why the school is strict about these rules.

But now, we can take items {including homemade items} to school when he is assigned snack day.  A few more options!  

Obviously peanut butter stayed on my brain yesterday, as LOOK AT THIS FROSTING.


The bottom brownie part is stellar but I do think the frosting is what makes theses beauties. It's thick, creamy and full of peanut butter flavor.  And those sprinkles?

Well, I just added them for fun.  You certainly can pass on those.  Although the kids loved them.  As sprinkles make everything better.

Oh, and feel free to use regular cocoa powder and not the special dark kind I used.  I realize some people aren't a fan of dark chocolate!  But really, if you have some guts try them this way, I think you'll like 'em.


Fudgy Dark Chocolate Brownies with Peanut Butter Frosting

Print this Recipe!

Brownies:
2 eggs
8 T. butter
1/2 c. milk
2 t. vanilla
1 c. sugar
1/2 c. brown sugar
1 t. salt
2/3 c. special dark cocoa
2 c. flour

Frosting:
4 oz. softened cream cheese
1/2 c. sugar
3/4 c. peanut butter
1/4 c. milk
1 t. vanilla

1.  Preheat oven to 350 degrees and grease an 8x8 or 9x9 glass baking dish.
2.  In a small saucepan melt the butter, then stir in the dry cocoa and vanilla.  Pour this mixture into a bowl.
3.  Sift together the flour, sugars, and salt.  Add to the chocolate mixture and beat in eggs.  This mixture will be thick.  Pour in the 1/2 c. milk to help loosen.  Stir to combine.
4.  Place brownie batter in the greased pan.  Bake for 25 minutes or until toothpick inserted comes out clean.
5.  Allow brownies to cool completely.
6.  In a bowl combine all frosting ingredients.  When brownies are cool, frost and add sprinkles.
7.  Keep brownies covered to stay fresh.

I gave a good chunk of these brownies away to a friend and her family and saved just a few for us.  They are SO rich and decadent that a little go a long way.  

I cannot be trusted with brownies!
