Well......I bit the bullet, I caved and purchased an Instant Pot.

Not that I was counting but I had around 48 of my friends tell me I needed to try it.  And since I often do what people tell me I finally ordered one.  I ended up purchasing the Instant Pot LUX80 8 Qt. 6-in-1 Multi-Use Programmable Pressure Cooker.

And yes, I've heard all about the warnings and the RECALL {which didn't affect mine} and look, I don't get real jacked up about those things.  So, I'M FINE.  I survived the first {and second} use of this device.

I eased into using the Instant Pot.  

I figured I'd start with the standard basic recipe - hard boiled eggs.  That is what everyone told me to start with and again I often do what people tell me.  Plus, we're big egg eaters in this house, so I planned a side dish of deviled eggs with our grilled hamburgers for dinner that night and made sure to have a few extra for lunches the next day.

So I whipped this bad boy out of the box and read the directions.  I cleaned it out, whiped it down, got out my eggs and figured it out.

This happened to be a Saturday afternoon and the husband was in the living room {adjacent to our kitchen} and finally he asked, "what is wrong, what are you doing?"

Guys.  I was nervous.  I was literally dancing around waiting for that thing to heat up, for the eggs to cook, then the steam to vent....just literally waiting and hoping my house didn't blow up.  I was in the middle of doing laundry and didn't even want to run to the laundry room to switch loads, just in case I missed something.

But, guess what?  We all survived.  It worked JUST FINE.

We devoured those delicious deviled eggs that night.  Then of course my brain started spinning.  I asked anyone who breathed to send me their favorite recipes {which you did, thank you}.  I now have a stockpile of recipes to try.

I then got a little bit cocky and figured I'll just make up my own tasty dish!

Enter in this Instant Pot Cinnamon Roll French Toast.

It all started with a trip to Trader Joe's.  Their Cinnamon Roll Swirl Bread jumped into my cartInitially it was intended for a quick slice of buttered toast on busy school mornings, but of course my food blogger brain then starting rolling and I ended up with this recipe.

Which turned out brillant I might add.

Any baked French Toast is my friend because I, as a Mom, does not like standing over the griddle on the kitchen counter flipping their families breakfast.  This dish allows you to remove it from the Instant Pot, place it on the table and ALL EAT TOGETHER.

I added chopped pecans because I love them.  Completely optional though - or feel free to add diced dried fruit or mini chocolate chips, whatever your family likes.  Or keep it very plain and just sift powdered sugar on top after AND drizzle on some maple syrup.

All variations make it delicious.

From start to finish, this is done in 30 minutes.

Heck, do I dare say you could even make this on a school morning?

Probably not for me, as I'd rather watch the news and drink coffee until the last possible minute I need to get my kids moving {for fear they'll be tardy}....but if you love big breakfasts and ENJOY making them on busy mornings, by all means go for it.

This is like one GIANT cinnamon roll.  

First, if you don't have one and have been wanting one, I completely recommend this version of the Instant Pot.  Then get to work on making this French Toast!

Instant Pot Cinnamon Roll French Toast

This is an easy baked French Toast recipe for the Instant Pot or pressure cooker. It cooks in half the time and is an delicious weekend breakfast.
prep time: 5 MINScook time: 25 MINStotal time: 30 mins

ingredients:


  • 8 slices cinnamon swirl bread, cut into small cubes
  • 2 T. butter, cubed
  • 3 eggs
  • 1/4 cup milk
  • 1 T. white sugar
  • 1 T. brown sugar
  • 1 t. vanilla extract
  • 1 t. cinnamon
  • 1/2 cup pecans, chopped
  • maple syrup for topping
  • 3/4 cup water

instructions


  1. Grease an 8x8 round baking dish or cake pan for the 8 qt. Instant Pot.  If you have a smaller pressure cooker, use a smaller baking dish that fits.
  2. Slice the cinnamon roll bread into small cubes.  Add half of the bread to the baking dish.  Then cube the 2 T. of butter and sprinkle over that first layer.  Then layer on the remaining bread cubes and sprinkle on half of the chopped pecans.
  3. In a bowl whisk together the eggs, milk, sugars, vanilla and cinnamon.  Pour this mixture over the bread cubes making sure to cover all of the bread.
  4. Set the trivet into the bottom of the Instant Pot or pressure cooker.  Pour in 3/4 cup of water.  If you don't have a trivet to lift the pan out when done, make a sling out of a long foil strip (this is what I do).
  5. Center your baking dish on the trivet or foil strip and lower it into the Instant Pot.
  6. Lock the lid in place.  Select High Pressure and set the timer for 25 minutes.  If using a Instant Pot select the porridge button and add 5 minutes to the cook time.
  7. When the timer goes off, turn the steam release valve to venting to release the pressure.  Keep the French Toast in their for an additional 5 minutes to help set up.
  8. Remove the lid and dish from the pot and serve warm with additional chopped pecans and maple syrup.

If you enjoy a more crispy topping you can place your baking dish under the broiler for 2 minutes in the oven.
