DIY Sunday: Family Time & Meatball Subs

On the 4th we planned on doing nothing.  The husband had to work the festivities all day and I was home with the kids.  And as you can tell from below - unshowered and looking dreadful lovely.  But a good friend called that morning and asked to get the kids together, so we did!

Since it was 100 degrees out, the kids only lasted about 30 minutes on the slip-n-slide, so most of the day was spent indoors (ugh), but we made it work.

And so the rest of the week has been low-key.  I've been off work and we've been stuck mostly inside because of the heat.  I think the library is getting sick of us coming in everyday, but the kids love it.  Minus the tantrum the Little Miss threw yesterday which was beyond embarrassing...

I normally don't crave hot meals on hot days, but I was running out of options this week, so yesterday I pulled out the slow cooker and made these meatballs.

And turned them into these meatball subs for us, and spaghetti and meatballs for the kiddos.  Spaghetti is hands down one of their favorite meals.  They'd probably eat it every meal if I let them.


Tomorrow, we head to meet my parents and drop of the kids.  Our daycare is on vacation this week, so Grandma and Grandpa are going to get some quality time with them for about 4 days!  I hope they are ready.

The downtime is nice, but gosh I always miss them like crazy.  When will this get any easier?

    I have never had a meatball sub, but now that is all I want.

  2. I used to get meatball subs all the time when I went to Subway as a young girl. Now I can't even think of the last time I had one! I think this posts made me want one :)
    Enjoy the time away from the kids. I'm sure it's very difficult, but relish it if you can!!

  3. My munchkin has turned into Miss Pickypants this year (she's 2). Spaghetti and meatballs or mac and cheese with peas are 2 that I can usually get her to eat. You sub looks fantastic!

  4. Kids can be so funny. Our little girl will love bananas one week and the next week turn up her nose. I'm sure now that I've told the world they love spaghetti, they'll hate the leftovers:)
