One Hour Cinnamon Rolls

Block out an hour, yes I said just ONE HOUR, and you'll be devouring 
these cinnamon rolls at your breakfast table.

Sometimes I dream the most random things.

Last night it was dinner out with friends to a ridiculous, quirky joint where you paid an entrance fee and then wandered around the different venues picking and choosing what appetizers you'd bring back to your table.

I remember something about friend pickles and crock pots.  It was so very weird.

But then later during the night I dreamt about making homemade cinnamon rolls.  If you know me, then you know the only cinnamon rolls I make is this fun, non-yeast pumpkin version.  They get requested a lot and I even brought them to my family's Christmas last month.

I have never attempted....you know...the real deal kind of cinnamon rolls.

I think I wouldn't be so scared of it if I didn't have three kids under the age of six.  Trying to focus and concentrate on one item in the kitchen for longer than about, I don't know, a millisecond, somewhat terrifies me.

My eyes are always darting from here to there.  I often have the two oldest fighting over what cartoon to watch {cut me some slack, I'm busy in the kitchen} and the youngest is climbing out of her high chair.

To this day, I still can't figure it out.  SHE IS STRAPPED IN.

Anyway, what I'm saying is my mind is often going in a zillion different directions.  So to go to all this work and not have it turn out would be utterly disappointing.

But considering I dreamt about making some....I wanted to bring it to real life.  I literally got out of bed {last by the way, the whole house was up, which is so very rare}, entered the kitchen and said I was going to make homemade cinnamon rolls.

The husband looked at me like I was waving my freak flag.

Today?  Right now?  Why?

I don't know, why are you asking so many questions two minutes after I've woken up?  I just announced I'll be making you HOMEMADE CINNAMON ROLLS and for whatever reason you are questioning it.

What he has learned over the years is to just let me do my thing in the kitchen, as more often than not, he'll end up eating it and enjoying it.

So I got to work.

I had read about cinnamon rolls you could make in an hour.  My kind.  Obviously.  I don't have the patience for punching down dough, letting it rise and my kitchen being a mess for half the day.

I also remembered my friend Amanda, from I Am Baker {visit her site, she is super talented} talking about how she featured cinnamon rolls on her blog awhile back and the photo she used showed them literally drowning in icing.

And people went nuts.

In a bad way.

Do those need so much frosting?  Frosting much?  Where is the roll?

You see, a little bit of controversy never hurts a recipe.  So I slathered on the icing too.  If you don't like it I guess cut back.  But you're missing out!

One Hour Cinnamon Rolls

1 c. warm water
3/4 c. whole milk
1/4 c. sugar
1/4 c. melted butter
2 T. regular yeast
pinch of salt
2 eggs
5 1/2 c. flour

Filling:
4 T. melted butter
2/3 c. brown sugar
2/3 c. white sugar
2 T. cinnamon

Icing:
1/4 c. butter, softened
4 oz. cream cheese
3 c. powdered sugar
1 t. vanilla
1/4 c. milk

1.  Preheat the oven to 375 degrees.  Grease a large rimmed pizza pan or 9x13 baking dish.
2.  In a stand mixer combine water, sugar, milk, butter, salt and yeast.  Let stand for 15 minutes.
3.  Add in eggs and flour mixing for a full 10 minutes.  Then let stand for another 10 minutes.
4.  Combine your filling ingredients and set aside.
5.  Roll the dough out on a floured surface, creating a large rectangle.  Spread the filling mixture over the dough reaching the edges.
6.  Roll up the dough and using a serrated knife cut into 12 rolls.
7.  Place in the baking dish and bake for 20 minutes.
8.  In the stand mixer combine the icing ingredients.  If too thick, add a bit more milk for spreading consistency.  Spread over the warm cinnamon rolls.
