Snickerdoodle Blondies

Snickerdoodle Blondies

Well, we are about two weeks into our official Summer vacation and life is cruising along. For whatever reason it feels like at warp speed. This week I'm helping at our church's vacation bible school, so once we get home at lunch the day is half over and I'm trying to crunch in all the things before we head to the ball park at night.


I felt like it had been ions since I last baked so last week and a bit over the weekend I baked! I looked back at my recent blog posts and the past seven were savory dishes. SEVEN! 

My last sweet treat dated back to April.

Snickerdoodle Blondies

So guess what's today.....dessert!

About time, right?

Now, I've always and forever loved a classic snickerdoodle cookie {who doesn't?} but I don't always love rolling each individual cookie into cinnamon and sugar. 

I realize....small step....but when life is busy, it's another one to add to the list! So I came up with these Snickerdoodle Blondies instead. No rolling needed.

Snickerdoodle Blondies

This cookie batter is SIMPLE - minimal ingredients {most we all have on hand in our kitchens or pantrys}. After that you spread {or sprinkle} a simple vanilla/sugar/cinnamon paste on top to give it a crunch and some extra flavor.

Seriously, your kids could make these bars, they are incredibly easy.

After letting them cool, they cut easily into bars. Don't expect them to last long though! Just like the cookies they are chewy and packed with cinnamon and nutmeg flavor.

These bars are great for any gathering and hold up really well - even in the heat of the Summer! It's a great bar that doesn't melt. If wrapped up tight they stay fresh for a few days.

We've even froze these! Just wrap them up individually in plastic wrap and they can be eaten pretty much straight out of the freezer.

Cold or at room temp, they are a fan favorite.

Over the years I have made so many, many bars. What can I say - they are easy and delicious! Some of the popular ones that continue to get many page views year in and year out are my Reese's Peanut Butter Cup Brookie Bars, my Pumpkin Pie Cream Cheese Bars, my Oreo Fluff Bars and my Peanut Butter Magic Bars.

I have no doubt I'll be adding these Snickerdoodle Blondies to that list soon.

Snickerdoodle Blondies

If you love a classic snickerdoodle cookie - then these bars will become a favorite too! Only less hassle and easier to make!


For the Batter
  • 2 2/3 cups flour
  • 2 t baking soda
  • 1 t cinnamon
  • 1/4 t nutmeg
  • 1 t salt
  • 1 T vanilla extract
  • 2 cups brown sugar
  • 2 sticks unsalted butter, softened
  • 2 eggs
For the Topping
  • 1 T vanilla extract
  • 3 T sugar
  • 2 t cinnamon
  • pinch of nutmeg


  1. Preheat the oven to 350 degrees and lightly spray a 9x13 pan with cooking spray.
  2. In a stand mixer or using a hand held mixer combine the butter, brown sugar and vanilla until light and fluffy and then add in the eggs one at a time.
  3. Sift together the dry ingredients and gently add it to the wet batter until just combined. The batter will have a consistency of cookie dough.
  4. Spread/press the batter into the pan evenly.
  5. In a bowl combine the topping ingredients (it will be crumbly and wet) and sprinkle it on top of the batter.
  6. Bake the bars for 25-30 minutes or until slight firm to the touch and golden brown.
  7. Allow to cool and then cut into bars.
