All the flavors of chicken parmesan in a meatball!
These are fun and easy, plus the crock pot finishes them off and keeps them warm till dinner.
I have been making this chicken version of a meatball for years and years....and most recently when making it for the family I took some new photos to share with you.
It's a fun change up from traditional ones and I've always, always loved chicken parmesan, so trust me when I say that THIS meatball tastes like the original dish just in different form.
Everything gets thrown in the bowl here - ground chicken, eggs, breadcrumbs, Italian spices, garlic and eggs.
Once it's all mixed up together you shape them into bite-sized meatballs. Not too big, not too small. After that you par bake them (about two-third's of the way though) on parchment paper on a rimmed baking sheet in the oven.
Then they go swimming in marinara sauce in the slow cooker to finish cooking until dinner. Simple as that!
This is the perfect meal for families, especially busy families. They can be prepped in the morning and dumped into the crockpot to finish cooking as the day goes on.
And you most definitely will love the smell of the Italian cooking wafting from your house when you come home from work.
Now, this past week we ate these chicken parmesan meatballs with spaghetti. What kid doesn't love a good spaghetti and meatball? But another fun way to eat them are as baked subs. And a healthier way to eat them are over a batch of greens (arugula, spinach) dressed with olive oil, salt, pepper and a little more grated Parmesan.
They also reheat really well in the air fryer if you have enough leftover the next day for lunch.
Put these on your meal rotation soon! They are fun, a bit different and kids love them. And if you get real ambitious make a double batch, freeze half and dinner is set for a future busy day.
