I couldn’t let another winter pass without a new, delicious
soup for all of you. You’ve loved my regular Lasagna Soup for years (traditional,
with a red sauce) so naturally it was time for a white version!

Dairy and I wanted to showcase their low-fat plain
yogurt in a savory way and this soup did not disappoint. It gives the soup
a slight tangy undertone, as well as creamy texture. You’ve got to make this
one right away.
This soup is loaded with easy ingredients – rotisserie
chicken, pasta, spinach, sun-dried tomatoes, Parmesan cheese, onions, garlic
and Italian seasonings. Just re-reading this flavorful combination makes my
mouth water.
And while some people think a hearty, homemade soup needs to
be a weekend affair, a slow simmering meal – this soup comes together in under
30 minutes and makes an easy weeknight dinner.
Adding both half and half and AE
Dairy’s plain low-fat yogurt, as well as a nice hearty chicken or bone
broth – well, I’m sure you can just about imagine the creaminess.
Their plain,
low-fat yogurt is made without any added sugar and is super smooth,
resembling the texture and similar taste of sour cream.
It’s the perfect addition to soup!
We liked topping this lasagna soup with additional shredded
Parmesan cheese (love the saltiness!), but other toppings such as a creamy
ricotta or any herbed cheese would be fun too.
Our kids gobbled this up with a side of grilled cheese
sandwiches (I have teenagers, the more food the merrier) and my middle child (and
most adventurous eater) promptly said to make again soon.
I’ll consider that a win any day!
