Iced Oatmeal Cookies

Here is my copycat version of those store bought Iced Oatmeal Cookies.
But be prepared...mine are MUCH better!

Sometimes I have recipes lined up weeks in advance and sometimes it's Tuesday with a Thursday deadline and I have no clue what to share with you all.

This week was the latter.

But it all worked out perfectly because these COOKIES ARE A DREAM COME TRUE.

Unless you've never ventured into the cookie aisle or never had a childhood (ha!), then you know all about the classic iced oatmeal cookies that came packaged in a 3-tier plastic sleeve that we all adored. They were crispy with hints of cinnamon and had just a thin layer of icing on top to make them sweet.

I have rarely bought them for my kids, but when I had them taste this homemade version they all knew the store version I was talking about.

And they all unanimously agreed that these are amazingly better.

Mine look similar, but the taste is most definitely superior. 

They are slight crispy on the edges, chewy and full of tender oats in the middle and the cinnamon powdered sugar icing brings it all together on top.

I love how the icing hardens and holds the cookie together (just like the store version). It truly is what makes these cookies recognizable to many.

And please take note - this recipe makes just 10 big cookies - you can certainly double the recipe if you want more. 

Each cookie is 4 tablespoons of dough (so pretty big). I used this cookie scoop for mine. If you don't have that big of a cookie scoop, that is completely fine, just know your batch will make more cookies and will be a bit smaller + it may only take 10-11 minutes to bake versus 12.
