I swear I could come up with a new cookie recipe weekly!
This one is melt in your mouth delicious.
If you have someone in your life who loves a chocolate chip cookie, but also appreciates a twist - this cookie is for them!
Obviously my original, traditional chocolate chip cookie is always a good standby, but personally this one is my favorite. The texture is different, but the taste is familiar.
I'm always dreaming up new cookie recipes (probably because I have two teenagers and one tween who are always hungry) and this one I had been thinking about for while. I love it's citrus cousin (found here) so I did some tweaking to that recipe and these turned out amazing.
The cornstarch in these cookies (yes, cornstarch!) gives these cookies a shortbread like texture. They are called "meltaways" because they do just that - literally melt away in your mouth at first bite. They are slightly crispy, yet soft and tender.

Mini chocolate chips work best in this cookie dough - as previously said the cookie batter is a bit tender and flaky so bigger chocolate chips won't hold in as well.
You press these down with the bottom of a glass cup before baking and they bake into these perfect little round discs. No need to chill the dough before baking, just mix up, press, bake and enjoy. They turn out great every time.
If you want to bake a cookie for someone I highly recommend these because 1) they taste incredible and 2) they package up beautifully!
I cannot wait to see you make these. When people think they are grabbing a regular chocolate chip cookie they'll be pleasantly surprised after the first bite.
