Strawberry
shortcakes….but make them into sundaes!

Strawberries have long been one
of my favorite fruits, so naturally when June hits in the Midwest, we all know
those strawberries are ripe for picking.
Growing up my Mom always went to
the local strawberry patch and I often tagged along so we could pick a full
flat to later make homemade jam. Then once I had kids, I did the same. I loved
it so much I vividly remember taking two toddlers and a one-month-old there!
I’m not sure how much we accomplished that day, but we do have the memories.
Once home with all these berries, then it’s always….what
do we make?
Well today my friends, it’s these Strawberry Shortcake
Sundaes! Such a fun twist on the original.

Dairy and I decided to feature their Whole Milk in the
biscuits. Their whole
milk is creamy and just hours fresh from local Iowa farms. This full-fat
milk is also a great product for those wanting to add extra protein to their
diet with 8 grams for just one cup.
The result is a flaky biscuit that not only has AE Dairy whole milk in
the dough, but I also brushed the tops with some of the milk in replace of an
egg wash for fun – which gave them all a golden glow when baked.
And what did I do with the remaining whole milk in the
fridge?
Well, the husband has been enjoying it on cereal all
week!
And look at how these turned out?
Absolutely gorgeous. Flaky biscuits, fresh
strawberries…..and our twist on the original, vanilla ice cream.
Because why not? The result is amazing. A little
salty bite to cut through the sweetness of the berries and ice cream.
This is the perfect little dessert for any summer gathering.
The biscuits can be baked ahead, and everything can be assembled right before
serving.
Add a little fresh mint for garnish and it will look like
you’ve spent all day on it! Heck, your guests might even ask for a cold glass
of milk to go along with!
