This dreamy soup comes together well under an hour and is stick-to-your-ribs delicious.
It will become a family favorite!
A few weeks back my oldest (how can he be 17??) went to the Olive Garden with his football team and came back raving about their chicken gnocchi soup. What he didn't know what that I used to make that a lot when they were little - but he couldn't remember!
I told him I have this recipe on my blog and that I would make it for him again soon.
And this week I did!
It also gave me the opportunity to take new photos, rewrite this post and give it some new updated love.
What's fun about this soup is the simplicity. I believe it took me around 40 minutes start to finish. People often think that homemade soup is time consuming and difficult, but really it's just a lot of chopping and stirring!
The ingredients in this one are basic and the only two real items that you may have to run to the grocery store for are rotisserie chicken and store bought gnocchi.
Other than those two items it's chicken broth, cream, garlic, onions, carrots, salt, pepper and a small amount of flour for thickening.
This is a soup that you want to serve your family on a chilly day or if having family over. It's hearty and creamy and takes the chill right out!
And if you've never had gnocchi, give it a try.
They are the Italian version of an American "dumpling" - most often made with potatoes or a combination of potatoes and flour. They are soft and tender and taste delicious is any soup.
Definitely put this soup in your winter rotation! We like to serve it with slices of sourdough for dunking or to just eat on the side with butter.
It's also a great one to make for anyone needing a little pick me up!
