It certainly feels like spring today. The sun is shining, and I think the high should be in the upper 40's. That is great for Iowa in March. I am just dying to get little man out in the stroller and on a walk, but I think it is just a hair too chilly yet. What do you think?
Later today we are meeting the whole family (my side) for dinner to celebrate a month full of birthdays and anniversaries....can't wait! We are meeting at a new restaurant (at least to us) in a small town about 45 minutes from here. Word is you get a TON of food for a little price, and it's BYOB! Yep, you cart in your own wine, beer, etc. Should be fun!
Okay, who loves a burrito? Honestly, I've never ordered one in a restaurant or made them, I'm more of an enchilada girl. But, when I saw this recipe on Iowa Girl Eats, I knew we had to try it. And it's one where you can dump in whatever you want or have on hand - that is what we did!
Burrito Bowls
2 c. brown rice
1 1/2 c. water
1 can diced tomatoes and chilies
1 boneless skinless chicken breast
shredded cheddar cheese
sour cream
chili powder
cumin
Dredge chicken breast in chili powder and cumin, covering to coat. Place on grill pan and cook until juices run clear and chicken is done. Meanwhile puree can of tomatoes and chilies in food processor or blender until desired consistency (or leave chunky if you like). Bring 1 1/2 c. of water and 1/2 c. of tomato/chili puree to a boil. Pour in rice, stir and take off heat. Should take about 8-10 min. to absorb all liquid.

Then assemble your bowls! Rice, diced chicken, salsa puree, cheese, sour cream, etc. You can certainly add in whatever else you like - steak, black beans, refried beans, lettuce, jalapenos, crushed tortilla chips...use what you have on hand!

These were really, really good. We both commented that it was like eating a burrito bowl from Pancheros or Chipotle. That good!
When you eat Mexican are you a soft shell, hard shell or no shell person? I'm definitely a soft shell person, but now I also like the no shell!
