4 Cheese Baked Macaroni Revisted

Ali picked Roberto last night! (On The Bachelorette, if you aren't following...) I was sad to see nice little Chris sent home, but I do think Ali and Roberto make a nice pair. The husband even compared them to Trista and Ryan - yes, he watches with me!

Only time will tell if they last...

Now on to food!

I often make a baked macaroni for a side dish. Remember a few months ago when I made my 4 Cheese Baked Macaroni?

You can find the recipe here. I believe the four cheeses I used then were Velveeta, parm, cheddar, and bleu cheese.


So, last night I amped up the fiber a bit with whole wheat bow tie pasta and broccoli and changed the cheeses to Velveeta, cheddar, feta and parm. Needless to say, you feel much better eating mac and cheese when it's made with whole wheat pasta and a veggie is added in.

Actually, I never feel guilty eating mac and cheese, but I know some people do.

Try this recipe! And of course, being the planner I am, I filled up two other ramekins to stick in the freezer for another time. Are you freezing meals yet?

Last night from 2:30-3:30 a.m. we had a MAJOR thunderstorm. The hubs and I laid there praying it wouldn't wake up little man (it didn't) and wishing we could get back to sleep. I've never heard it rain so hard!

Agenda for today is doing some jam making, dip making and bread baking for the farmer's market tomorrow. Let's pray there is no rain...I wish I could have one day there with low humidity and no rain. If my prayers aren't answered I'll be taking orders!

When the husband gets off work we are heading to Cedar Rapids to meet up with some family, for a little picnic in the park.

  1. SO glad you said you don't feel guilty eating mac and cheese!! There is nothing wrong with mac and cheese... just think how many of us grew up eating it and then all of a sudden we get brainwashed as women that it's bad. It in and of itself isn't bad, it's only when we eat too much. Sorry to get off on a tangent, haha, I just thought you made an excellent point!! Your recipe looks delicious!! :)

  3. Agree with everything about this post. Love baked mac and cheese. Was awakened by that crazy loud thunder and lightening storm,so ready for no humidity/sunshine, and I love freezing meals! The perfect solution to busy nights.
