Spiced Granola Muffins & Winner!

So, besides my love of pizza, or a good sandwich, muffins don't fall too far behind. In fact, just look at two other muffin posts I've blogged about:)


These muffins are healthy and moist, with just a hint of spice. Of course, they aren't as healthy, when I slather them in some butter and homemade strawberry jam, but heck, I tried.


Spiced Granola Muffins
2 eggs whites, 1 egg
2/3 c. milk
1 t. vanilla
1/2 c. honey
1 t. cinnamon
1/2 t. pumpkin pie spice
1 t. baking soda
1 c. whole wheat flour
1 c. granola

Mix all wet ingredients together and sift in dry ingredients. Stir until just combined. Spray muffin liners with cooking spray and fill 3/4 of the way full. Bake at 400 degrees for 18-20 minutes, or until a toothpick is inserted and comes out clean.
