Overnight Blueberry Maple Oatmeal Muffins + Cookbook Giveaway!




Have you ever soaked oats overnight?  It's kinda fun!  I adapted Shauna Sever's recipe for these muffins to what I had on hand.  Plus, I'm giving away a copy of her latest cookbook.  Read below!



As a food blogger I have daily emails in my inbox asking about product reviews, press releases for new cookbooks, questions from readers, etc.

Many of them are hit or miss, but a few weeks back a contact I have made from a PR firm in New York contacted me regarding one of their clients new cookbooks.

When I hear "cookbook" I'm all ears.  Shaun Sever is cookbook author, baking blogger, television host and mother of two.  What isn't there to like about that resume?  They offered to send me her new cookbook, cook a recipe that jumped out at me and giveaway a copy to you!

Win, win, win.

This book of Shauna's, is a bit different from her last one {think every type of marshmallow known to man!} but just as fun.  She experiments with every natural sugar you've heard of {and some you haven't}.  Who says you can't have healthy sweets?



This book has 80+ recipes, all desserts, none using refined white sugar.  Instead she uses sweeteners like honey, coconut sugar, pure maple syrup, agave nectar and more.

I love that she sets up each recipe with a bit of a story.  And humor.  Humor always reels me in.  That way I know she is real.  You can just by reading her entries that she can laugh at herself.  {Never trust anyone who cannot take a joke}.

I had a hard time decided what to make.  The Apricot, Cranberry and Almond Whipped Cream Scones were a close second, followed by Maple Chocolate Cake.  In the end I settled on her muffins.  This I knew my family would love.  What kid doesn't like a muffin?  Especially a blueberry one.

Her original recipe called for turbinado sugar, just on the topping {it gives it a nice crunch}, but I didn't have any hand.  So I just omitted it and replaced it with a bit of cinnamon.



Overnight Blueberry Maple Oatmeal Muffins
adapted from Real Sweet

1 1/4 c. buttermilk
1/4 c. pure maple syrup
2 T. honey
1 egg
1 T. vanilla
1 1/3 c. old fashioned oats
1/2 c. whole wheat flour
1/2 c. unbleached white flour
pinch of salt
1 t. baking soda
1/2 t. cinnamon
3/4 c. blueberries
extra oats/cinnamon for the topping

1.  In a bowl combine the first 6 ingredients.  Stir, cover and place in the fridge overnight.
2.  When ready to bake, preheat the oven to 425 degrees.  Grease a 32-count mini muffin tin.
3.  Add the flours, salt, baking soda and cinnamon to the overnight mixture.  Stir until just combined. Fold in the blueberries.
4.  Place a spoonful of batter into the mini muffin tins.  Top each with dry oats and a sprinkle of cinnamon.
5.  Bake for 8-9 minutes or just until golden.  Allow to cool and remove to a wire rack.  Makes 32 muffins.

Eat these muffins straight out of the oven warm or store them in an airtight container.  They also freeze well!

  1. When baking with fruit I will take out some sugar when called for. The natural sweetness of the fruit comes thrugh.

    One of my favorites is simply local honey. Since I started subbing it out in recipes, I am spending a bit more (local honey is pricey!) but I enjoy the flavor more.
