Pepperoni Pizza Lasagna Roll-Ups

All the taste of pizza, rolled up like lasagna!  
Creamy sauce, a bit of spice from the pepperoni, comforting and delicious!

For some reason I'm imagining every 10 year old boy loving this recipe.  Maybe it's because when I posted it on Instagram I had people saying, "my kids would love this!".  Because let's be honest, every little boy's favorite pizza topping is pepperoni, right?

So most kids {and adults} love lasagna and love pizza.  So why not put them together?  I also have another very popular lasagna roll-up recipe on the blog.  Check that one out too. People love it.

But this one....it came out of me staring at pepperoni at the grocery store.  For whatever reason I felt like I needed to get some.  At a past freezer swap with some girlfriends I was given a lasagna and it was layered with pepperoni.  It gave the dish so much flavor!  I knew I needed to recreate it somehow.

So I got to thinkin'.

Why not layer pepperoni with a creamy sauce and roll the dang thing up?  So that is what I did.  The kids were napping {a.k.a. two really sleeping, one faking it} and I threw this dish together.  

Dinner time with kids {you know, those hellish hours from 4 to 6 p.m.} go so much more smooth when I prep ahead of time.  If I don't I've got kids with low blood sugar begging for a snack when I'm juggling something hot on the stove and trying not to trip over the dog. Who is undoubtedly always under my feet.

Even better, prep this the day before!  And my all-time rule with making anything lasagna - always double the recipe.  I feel if you are making the effort to make this Italian classic, make two pans!  Eat one now and freezer another for later.

We devoured this dish.  Almost embarrassingly devoured it.  I had one "roll" and the next thing I knew each kid was on their second and the husband we clearly on three or four.

We had one measly piece leftover.  I ate it two days later for lunch.  Nothing goes to waste here!

And because you guys always ask, the baking dishes I used in these photos are Rachael Ray's Bubble & Brown series.  I love them!

Pepperoni Pizza Lasagna Roll-Ups

10 lasagna sheets
pepperoni slices
2 c. cottage cheese
1/4 c. grated Parmesan cheese
4 c. spaghetti sauce
1 c. shredded mozzarella cheese

1.  Preheat the oven to 375 degrees.  Layer 2 c. of the spaghetti sauce on the bottom of a baking dish.
2.  Boil lasagna noodles until al dente.  Rinse and allow to cool.
3.  In a bowl combine the cottage cheese, Parmesan cheese and spices.
4.  To assemble, lay out a lasagna noodle.  Spoon on a layer of the cream sauce and place pepperoni slices on top.  Gently roll up and place seam side down in the baking pan.
5.  Pour remaining spaghetti sauce over the rolled-up lasagna noodles.  Sprinkle with the mozzarella.
6.  Bake covered for 30 minutes, then uncovered for 15 minutes.  Allow to rest for 5 minutes before eating.
