Chocolate Dipped Peanut Butter Pretzels

I created these Chocolate Dipped Peanut Butter Pretzels out of necessity.

When my kids climb into the van after school the first thing out of their cute little mouths is "what's for dinner"?

THEY ARE STARVING.

When we get in the door they run to the kitchen and raid our fridge and pantry. I guess learning all day is exhausting and makes you ravenous! I try and have all the typical healthier foods on hand - fresh fruit, crackers, cheese, even leftovers from dinner the night before, but sometimes they need a quick small treat to help their "hangry" moods settle down a bit.

I timed myself making these because I was curious at how long they would take me - and it was just 30 minutes start to finish! So they make look a bit fancy, but honestly they are simple.

The filling you sandwich between these pretzels is just peanut butter (I used creamy), powdered sugar and vanilla extract. When mixed together it makes a nice, thick and sweet peanut butter filling. You place a small teaspoon on a pretzel and then press another pretzel on top of that creating a sandwich.

Prep all of these first and then get ready for the dipped chocolate.

I purchased the smaller, traditional "pretzel twists", but you could also use squares. They just need to be able to sandwich together.

I'll admit I tried a couple of these BEFORE I dipped them in chocolate and they were great! But I knew adding some dipped chocolate on the corner would cut through the saltiness a bit and add the perfect touch of sweetness.

For the chocolate I dipped these in melted semi-sweet chocolate chips. You can also use milk chocolate or even white chocolate! Really, use whatever you have on hand.

Now it being March here in the Midwest it's still cold outside so after I got these all dipped I simply set the tray in our garage so they could harden up. But if you are in warmer climates place the tray in your fridge or freezer to harden up. It's doesn't take long.

Once they are set they can be stored in an airtight container and will stay fresh for days.

My kids (and I) loved these! They are the perfect combination of both salty and sweet. And I've found a few of these really help settle their hungry moods when they get home from school.

Add in some sliced apples and it's the perfect snack.

It has already been requested from all three to HAVE THESE ON HAND ALL THE TIME MOM. So I guess I'll be buying more bags of pretzels!
