Swedish Oven Pancake

My Swedish Oven Pancake is a fun new breakfast, brunch or even dinner idea!
Easy to make, it's bakes up fluffy and beautiful. Top with fresh fruit and powdered sugar.

As you know our family loves breakfast for dinner now and then. It's a nice change up from our normal dinner routine and it always gets a thumbs up from the crowd.

Plus, it's easy!

I'll scramble up some eggs, throw some bacon in the oven and often bake up a sweet treat to go on the side. This last time it was this beautiful Swedish Oven Pancake. Which looks FANCY, but trust me when I say it's fuss free and super easy to make.

Pancakes of all kinds have always been a staple in our house and over the years I've made so many variations - my Sheet Pan Chocolate Chip Pancakes, my Cast Iron Skillet Dutch Baby, my Sausage & Pancake Bites - all super easy and delicious.

Hey, when your kids love something you find different ways to make them!

This version might be one of my favorites to date. For a few reasons. 1) all of the ingredients are mixed up in the blender 2) the oven does all the work and 3) it's so pretty!

What makes this pancake Swedish?

This Swedish pancake, unlike traditional pancakes, is an eggy batter with just a few other ingredients (flour, salt, sugar, milk) that is quickly pulsed together in a blender to make a thin, custard-like batter. That batter is poured into a baking dish of melted butter and baked. 

It bakes into a dense pancake with fluffy and light edges. The sides will often "puff" over the edges of the pan. It is traditionally served warm, dusted with powdered sugar and fresh fruit, cut into squares.

What a fun breakfast this is!

Not only for random weeknight meals, but for special occasions too. Like I have said, it looks fancy and complicated, but it is most definitely not. Start to finish it is done well under an hour.

I always serve ours with a dusting of powdered sugar and sliced strawberries - but any berry will do. I'll also have maple syrup available for anyone who wants a bit more sweetness.
