O'Henry Bars

These O'Henry Bars mimic the classic candy bar with their chewy peanut butter texture and chocolate topping. A real sweet treat!

I first made these O'Henry Bars waaaaaaay back in 2012. I barely had two kids then! And as with many of my old recipes sometimes they get forgotten and lost in the recipe shuffle.

But today, I've brought these back!

The original Oh Henry! candy bar (spelled a bit different than mine - you'll see different versions) was invented in 1920 by Nestle with production eventually stopping in the United States in 2019. A slightly different version still is sold in Canada.

It consisted of a peanut and caramel middle coated by fudgy chocolate.

My version has an bottom layer of oatmeal, brown sugar, butter, cream cheese and honey that gets pressed into a baking pan and baked until set.

It is then topped with a melted peanut butter and chocolate topping that holds the bars together and becomes that fun fudgy layer.

After you spread on that chocolate layer you put the pan in the fridge so it can "set". Once that chocolate has hardened they are ready to be cut into bars. 

This 8x8 pan makes 12 generous bars. They are rich and filling! Feel free to cut them in half again making 24 bars to feed a bigger crowd.

The oat layer is sweet and slightly gooey and the peanut butter and chocolate layer holds it all together.

These are a special sweet treat!

I like to keep ours in the fridge that way the chocolate layer stays nice and firm (especially if making these in the Summer when it's warm out). They can also be cut into bars and froze to save for a later treat down the road.
