While on a walk last week I came upon the most beautiful peach tree in an empty lot just loaded with gorgeous, juicy peaches. I'm not sure how I had not noticed this tree before as I'm fairly certain I've walked by it many times.
It immediately reminded me of my parents old peach tree - my Dad would often have great peach years where he'd have to use ladders to hold up the heavy branches loaded with peaches.
When I got home I could not stop thinking about this tree, I just didn't want these peaches to go to waste....so I asked a friend who lived across the street and called another friend who works for the city to see if anyone local takes care of this empty lot. As it turns out an investment company 30 miles away has owned the lot for years - both friends said, "pick the peaches".
Didn't have to tell me twice!
So I dragged my teen daughter (she was thrilled) over to the lot the next day and we picked two huge shopping bags full of peaches. There were still plenty left for my friend, but I made sure to grab the ones about to fall off right onto the sidewalk.

Today, I thought I'd head a bit more savory, with my new Peach Blender Salsa.

If you have someone in your family that isn't a fan of hot or spicy salsas, this is the one to try on them. My teen son GOBBLED it down. He's not a fan of too much spice and this one was perfect for him.
The peaches make it 'just sweet enough', but it's not overpowering. In fact, if you feed this salsa to any unknowing participant they may say....'what's in this salsa'?
The peaches are definitely there, but if you don't know it prior to eating you may not be able to pinpoint what that sweet taste actually is.
