Unlike traditional, creamy pasta salads this one is much different!
It's light, super flavorful and dare I say one of my new favorites? I can't pinpoint which part is the best. The homemade bruschetta? The marinated chicken? The tang and sweetness from the balsamic reduction?
All are needed to make this perfect side dish.
I have two other "chicken bruschetta" recipes on my blog. Clearly I love the flavor combination. Many of you have loved this pizza version with the addition of alfredo sauce. And this "skinny" oven baked version is always popular too!
I seem to adore tomatoes, garlic, basil, chicken, sweet balsamic and the like.
The fresh bruschetta comes together in a snap and sits in the fridge to let those flavors combine while you tend to the chicken.
I cooked my chicken in the air fryer for ease + I love how it gets a bit crispy on the edges, not to mention clean up is a breeze. If you don't have an air fryer cooking directly in a skillet or on the grill works too.
You will be temped to sneak bites of that chicken - it's amazing!
It would be also fantastic for graduations, wedding or baby showers or potlucks during the warmer months. It can be made ahead of time and trust me when I say the longer it sits in the fridge the better it gets.
