Bowl of Noodles....and what is it?

I was supposed to make Chicken Noodle Soup yesterday, but well, it turned into just chicken and noodles. Which was fine by us, because we like tons of noodles in our soup.

This meal was quite the adventure. I set out to make my own chicken/vegetable stock on Saturday. I've never done this before. Never. I got the idea from Christina, she made it look so easy, so I went for it.

I had plenty of leftover "ends" I could stand getting rid of, so I used them up. Carrots, onions, celery, herbs, etc. Basically I just dumped them in a big pot of water, along with some chicken breasts and walked away.


Homemade Chicken Stock
1 large pot of water
2 boneless, skinless chicken breasts
carrot ends
leaves on celery
2 large onions
1 T. garlic salt
1 T. parsley
salt/pepper

Fill large pot with water and put all ingredients into pot. Bring to a rolling boil. After a few minutes of boiling, bring down to a simmer. Let simmer for 30 minutes. Remove chicken breasts and let cool. Simmer another 30 minutes until broth has reduced by half. Take off burner and let cool. Strain all contents, catching all veggie pieces to let the broth strain through. Pour into container and let cool. Can keep in the fridge for up to 3 days or freeze for up to 3 months.

By all means if you are not as adventurous as me, by boxed stock, just make sure to get the low sodium kind.

In a crock pot add:
1 c. chopped celery
1 c. chopped carrots
1/2 c. diced onion
two shredded chicken breasts from day before
homemade chicken/veggie stock (around 6 cups)
2 c. water
1 t. salt
1 t. pepper

Cook on low for 5-6 hours, stirring once. Add a bag of No Yolk Noodles 30 minutes prior to serving. Yep, I added the WHOLE bag, and that is why we got Chicken & Noodles vs. Chicken Noodle Soup. (Angie, please don't yell at me for not making my own noodles! I will try your recipe someday, I promise.) Adjust seasoning before you eat, it may need more salt and pepper.


It was delicious! My husband said it reminded him of something his Grandma used to make. I guess I'm a "grandma making kind of meal woman" now. It made tons, so we are definitely having leftovers tonight.

  3. The chicken and noodles look wonderful! I made a lot of Emily's baby food. I still make a fruit or two to add in her morning cereal! I would make a big batch and freeze them in ice cube trays! I feel like it saved me a ton of money and was good for her!

  5. I hope it's peas. I love peas, Emily's been feeding them to Zach and he loves them too : ) but of course hers are store bought. Chicken and noodles is kind of an 'ultimate' meal for me, yours looks a lot simpler than the tedious home made noodle dish I'm used to.
