Spicy Taco Soup

This hearty fall and winter soup is a big fan favorite in our house 
and I'm fairly confident my kids could make it, it's so easy!

This soup comes courtesy of my sister.  She brought it to Christmas, the husband loved it, and long story short we were eating it again a week later.  It is quite possibly the easiest soup known to man {or woman}.  

Literally you brown meat, dump in ingredients and simmer.  I'm fairly confident to say you could be eating it in 30 minutes start to finish.

And when I say 'spicy', it's not THAT spicy, just has a bit of a kick from the Rotel and chili powder, kind of like chili.  Don't get scared!

I love to throw it all in the crock pot in the morning and then let it simmer and stew all day long. Your house will smell fantastic!  Not to mention this soup is frugal and filling.  I put it on our meal plan at least once a month during the cold winter months.  Everyone loves it and its easy on this mama to make in a pinch.

Spicy Taco Soup

Print this Recipe!

1 lb. ground beef or turkey
1 can black beans, drained and rinsed
1 can chili beans
1 can Rotel diced tomatoes and chiles
1 can diced tomatoes
2 c. corn
1 dry package ranch seasoning mix
1 T. chili powder
1 t. cumin
1 t. garlic powder

1.  Cook meat and drain off the grease.  
2.  Add in all other ingredients and simmer for 25-30 minutes or put all ingredients in a crock pot on LOW all day.  Serve and enjoy!

I told you it was simple.

    That soup sounds so good!!! You can't get Rotel in my city - what would you recommend as a substitution?

  2. First off Jolene, I am so sorry you don't have Rotel in Canada! You are missing out:( But, if I am remembering right Rotel is simply a can of half diced tomatoes and half diced green chilies. So for this recipe I would use regular sized cans of tomatoes and then a small can of diced chiles. Good luck!
