Healthy Applesauce Oatmeal Muffins

Let's kick off the new year with a new muffin! And a healthier one to boot.

My new Healthy Applesauce Oatmeal Muffins are a big hit.

The holidays are over and we are all looking to jump start some healthy heating. This includes main dishes, breakfasts and snacks! Especially if you have kids around as they are eating ALL the time. At least mine are.

These fun {and easy!} muffins can become a breakfast staple or a fun snack for after school - we've eaten them both ways. With fresh fruit and yogurt at breakfast and as a quick grab-n-go snack after school and in between sports practices.

This batter is full of easy pantry ingredients that are healthy. I promise no special trips to the grocery store are needed here {unless you don't have honey on hand}.

Unsweetened applesauce, quick cooking oats, honey, eggs, two kinds of flour, cinnamon, nutmeg, easy peasy stuff.

And making muffins is as simple as throwing wet and dry ingredients in a big bowl and gently mixing them up. No need to fuss about this recipe!

Some people say, why another muffin recipe Ally?

Because you guys love them! Whenever I introduce a new muffin recipe, no matter what time of year, it goes over like gangbusters. I'm not sure if it's because they are easy or family friendly or always a definite hit with most kids, but they are always in a fact a BIG hit.

Over the years I've made many, here are some of your favorites.

Oh, and grab some soft butter and slather it on! And yes, I know that defeats the purpose of the healthy muffin, but trust me it's delicious. The slightly crunchy top of oats and a sprinkle of cinnamon and sugar makes them pretty darn tasty too.

This recipe makes a dozen muffins - just enough for a couple days of snacks and breakfasts!
