This easy warm weather dip is great for parties!
Mexican Corn Dip is creamy, a little spicy and sweet all in one.
I had two teenagers come home from morning workouts + sports practices with this dip waiting in the fridge and you would have thought they won the lottery. Granted, they were STARVING. They probably would have eaten stale bread off the floor.
But, I instantly knew when they grabbed the Fritos bag and dug in we had a winner.
Oh my heavens, this is a really good dip!
This Mexican Corn Dip has a creamy sweetness from the corn, mayo and sour cream, but also has a bit of heat from the jalapeno and peppers + tons of flavor from the sliced green onion, garlic powder and cheese.
Everything comes together perfectly.
This one bowl recipe can be whipped together in 5 minutes, then you simply let it chill in the refrigerator for at least 2 hours or overnight. All of those brilliant flavors come together and get even better.
