We are smack in the middle of a muggy heat wave here in the Midwest. We get all of the weather extremes - very hot Summers and very cold Winters. When it gets like this most of our cooking drive goes out the window. We just want something easy and cool!
I often get requests this time of year for easy Summer meals that require little to no actual cooking, so I gathered up my 10 favorites.

This sandwich was inspired for all my vegetarian fans out there. A sub roll or baguette is hallowed out, smeared with onion and chive cream cheese, layered with tomatoes and cucumbers and topped with a dressed lettuce slaw. Need a bit more substance? Add crisp bacon!
This salad combines all of your favorite sweet and savory flavors. Juicy, ripe strawberries, salty crumbled feta cheese and a homemade warm bacon dressing that gets poured over crisp spinach leaves. Fresh and flavorful.
These are a family favorite - just 5 ingredients (corned beef, Swiss cheese, sauerkraut, tortillas and thousand island dressing). I like to either give them a quick toast in the air fryer, in a skillet or wrap up with foil for a quick warm up in the oven. These can be taken on the go!
This easy recipe amps up the protein a bit more in your traditional egg salad by mashing up cottage cheese into the eggs (trust me, you'll never know it's there!). We like our egg salad pretty simple - chopped dill pickles & some of it's juice, salt, pepper, mayo, mustard, etc.
