Peppermint Kiss Cookies

Holiday cookies need to be simple, we're busy!
My new Peppermint Kiss Cookies are both fun and simple.

For years my high school girlfriends and I got together each holiday season and baked ALL DAY LONG. It was an extensive event, but we all went home with containers loaded full of different holiday cookies.

Our kids were babies so it was easy to throw them all together in a room to play and we kept busy in the kitchen. It allowed us time to catch up and bake up all our family favorites. Nowadays, our kids are older, some off and into college and life is much busier. We no longer get together to bake and I miss this fun day!

My new Peppermint Kiss Cookies would definitely have made their appearance.

The months of November and December are BUSY, so I wanted to make sure you had an easy holiday cookie you could rely on.

The base of this cookie is a Devil's Food cake mix (yes you heard that right!) so no need to measure flour, sugar and baking soda. The cake mix has already done over half the work.

Simple additions of oil, eggs, mint extract and mini chocolate chips bring the cookie dough together. They only take 9 minutes to bake!

The peppermint flavor in these cookies is subtle from the mint extract but gets a nice "pop" in the middle from the Hershey peppermint kiss.

After these cool, they get chewy and soft. Not to mention they look very pretty on any holiday cookie plate!
