A fun and easy warm weather dip for Summer! Great as a pool snack too.
Creamy, crunchy, sweet with just a hint of heat.
I cannot believe June has almost already come and go. It's been a whirlwind around our house. School finished up and we dove head first into three different softball teams, the starting of football practices, kids with part time jobs and the door opening and shutting about every 10 minutes with everyone coming and going.
It's a blast raising these teens, but also exhausting.
I've resorted to family "group texts" each morning so that everyone knows the day's schedule (plus what chores need to be finished before noon). Every Mom out there with bigger kids knows all about this life!
During one of my slower moments waiting in between games last week I started scrolling my own website. There are SO MANY recipes out there. To the point that I even have forgotten about some of them.
I came across my old recipe for Jalapeno Hot Corn Dip. It was originally published on August 24, 2014! Almost 12 years ago.
Quickly I realized it needed retested, tasted again to make sure it still worked and new photos desperately needed taken.
So here we are folks, my Jalapeno Hot Corn Dip!
This dip is a breeze to make. Throw everything in a bowl, mix it all together and bake!
I also want to stress this dip is NOT spicy. Yes, I know it has a diced jalapeno in it, but you de-seed it (removing all the seeds where the heat is located) + there are so many other creamy and sweet ingredients in the dip that the combination is just perfect.
I'd call it "smokey" in a sense with the pepper and dried cumin, but there is also a sweetness with the corn! When you put the two together it gives the dip an incredible flavor.
I re-made this dip the day before I was slated to make a big grocery store trip, so needless to say there wasn't much in the house for lunch. I pulled this dip out of the oven and the kids gobbled it down. And later two of three told me again how great "that dip was".
If my kids ate it, yours will too!
It's such a great dip for any party. It can be made ahead and refrigerated until you bake it off. Can't you just picture yourself snacking on it by the pool?
