A fun and easy warm weather dip for Summer! Great as a pool snack too.
Creamy, crunchy, sweet with just a hint of heat.
I cannot believe June has almost already come and go. It's been a whirlwind around our house. School finished up and we dove head first into three different softball teams, the starting of football practices, kids with part time jobs and the door opening and shutting about every 10 minutes with everyone coming and going.
It's a blast raising these teens, but also exhausting.
I've resorted to family "group texts" each morning so that everyone knows the day's schedule (plus what chores need to be finished before noon). Every Mom out there with bigger kids knows all about this life!
During one of my slower moments waiting in between games last week I started scrolling my own website. There are SO MANY recipes out there. To the point that I even have forgotten about some of them.
I came across my old recipe for Jalapeno Hot Corn Dip. It was originally published on August 24, 2014! Almost 12 years ago.
Quickly I realized it needed retested, tasted again to make sure it still worked and new photos desperately needed taken.
So here we are folks, my Jalapeno Hot Corn Dip!
This dip is a breeze to make. Throw everything in a bowl, mix it all together and bake!
I also want to stress this dip is NOT spicy. Yes, I know it has a diced jalapeno in it, but you de-seed it (removing all the seeds where the heat is located) + there are so many other creamy and sweet ingredients in the dip that the combination is just perfect.
I'd call it "smokey" in a sense with the pepper and dried cumin, but there is also a sweetness with the corn! When you put the two together it gives the dip an incredible flavor.
I re-made this dip the day before I was slated to make a big grocery store trip, so needless to say there wasn't much in the house for lunch. I pulled this dip out of the oven and the kids gobbled it down. And later two of three told me again how great "that dip was".
If my kids ate it, yours will too!
It's such a great dip for any party. It can be made ahead and refrigerated until you bake it off. Can't you just picture yourself snacking on it by the pool?
Are you ready to try a new dip this Summer?
Give this one a try and tag me on socials (@sweetsavoryeats) and I'll be sure to share your photos on my page!

I also enjoy finding little breaks during hectic days, and I've discovered some interesting content at https://billionaire-spin.ca/ that makes downtime a bit more enjoyable.

ReplyDeleteHey! Top of the morning to anyone else keeping score on scraps of paper. Somewhere between the second coffee sip and the first countdown, I ended up on https://prediction-pro.com/ and the session grabbed my attention harder than expected. What gets me is the rhythm of it all: ten quiet seconds, a decision, then suddenly you're celebrating a clean call or squinting at the result wondering where those last few points came from. I nailed two rounds back to back and felt ridiculously clever for about three minutes. The market corrected my attitude immediately after that. Fair enough. The tension has this strange arcade-like quality to it, quick and sharp rather than draining. Funny thing, the rounds where I slowed down and skipped an impulse pick usually ended up being the ones I remembered most fondly afterward.

ReplyDeleteI was catching up on some industry reading this week and came across a fascinating breakdown of how Soft2Bet is rethinking player engagement through gamification and global expansion. The article dives into their MEGA platform, which turns traditional gaming into something far more interactive by letting players build and upgrade their own virtual settlements — a concept that feels less like a typical casino and more like a strategy game. What really struck me was their approach to international growth. They've been moving into markets across Europe, Latin America, and even North America, with a launch in New Jersey on the horizon through a deal with Caesars Entertainment. But it's not just about entering new regions — it's about making each brand feel local and personal, which is something I think is often overlooked in the rush to scale. Living here in the USA region, where the market is still evolving, seeing how companies balance compliance, localization, and genuine player engagement feels particularly timely. If you're curious about how gamification is reshaping the industry, I'd recommend reading https://www.sharonct.org/soft2bet-and-the-new-era-of-igaming-technologies-gamification-and-global-expansion/ – it gave me a fresh perspective on where the sector is heading
