Crispy Parmesan Garlic Chicken


I just realized my last two posts start with the word "crispy".  Guess I'm in a crispy mood or am just lacking in any descriptive words.

Someone once told me that the number one googled food is chicken.  Mainly because people always have it on hand, set it out to thaw and then have no idea what to do with it.  Chicken can be bland and boring, so finding new ways to spice it up will make your family happy.

This dish is one of them.

I know it looks like your basic crispy baked chicken, but the flavor is beyond good.  Marinating makes all of the difference.  This chicken soaks in garlic oil all day (or night) and that keeps it moist and flavorful.  I think the little man even thought it was a chicken tender after I cut it up for him, as he gobbled it down in a hurry.

The original recipe called for tomato sauce or spaghetti sauce to be poured over this and trust me I would have but didn't have any on hand.  You know my love all of things Italian.  This time garlic mashed potatoes and green beans just had to do.  Next time I'm cutting this chicken up and putting it on a salad - yum.

Crispy Parmesan Garlic Chicken
4 boneless, skinless chicken breasts (pounded thin)
1 c. olive oil
2 T. minced garlic
1 t. poultry seasoning
2 c. panko breadcrumbs (whole wheat, regular or gluten free)
1 c. parmesan cheese

In a large Ziploc bag, place chicken.  In a small sauce pan, heat oil, garlic and seasoning just until warm.  Pour over chicken and seal the bag.  Marinate chicken anywhere from 4-12 hours.

Preheat oven to 425 degrees.  Grease a baking sheet.  Dip chicken in breadcrumb/parmesan cheese mixture until well coated and place on baking sheet.  Bake for 30 minutes, until crispy and juices run clear.


A tried and true meat and potatoes meal.  Your hubby will be happy.  He might even clean up and do the dishes.

  2. You had me at crispy! I love crispy chicken and pork - I'll marinate my meat next time.

    My husband used to love pork and red meat, but after his colon cancer, not so much. My pork has to be pounded thin, and he can only have skinny burgers - so weird!

  4. no one in my house cares about the meat. but the potatoes....I just bought an antique potato ricer and my six year old is obsessed. peel, boil, and cool idaho russets, squeeze through the ricer....drizzle with melted butter and smoked salt. when you grow tired of traditional mashed potatoes, the ricer is a miracle. :)
