If you love grilled chicken, Caesar salads and sandwiches, then this recipe is for you!
My new Grilled Chicken Caesar Sliders are fun and easy.
Feeding my family has become a full time job. If you have kids (especially ravenous teenagers) you know exactly what I am referring to.
For example my 15 year old had a full breakfast this morning (two eggs, bacon, two pancakes) and then shortly before leaving for school scarfed down a plate of leftovers from dinner the night before.
Sigh.
And that was all eaten before 8 a.m.! Later it tends to follow that same route. Full plate at dinner, then more before bed. They are growing and sleeping like it is their job.
So naturally I was not surprised when my kids ate this dinner early and then again later when I served them. But with big compliments each time!
We've finally hit grilling season here in the Midwest, so I wanted to make a fun sandwich with juicy barbecue rubbed grilled chicken (and bacon!) as it's a protein filled staple in our house. If you don't have a grill (or don't want to drag it out) this chicken can also be cooked in the air fryer. Both work great.
And since my family loves Caesar salad I decided to combine the two favorites!
The smoky chicken and the cool, creamy Caesar dressing, plus the salty bacon....it's a delicious combo on these sliders.
If your kids love getting in the kitchen with you, then the final steps of this brilliant slider will be fun for them!
Grab a large cutting board and throw ALL of the ingredients onto the board (yes, all of them - including the dressing) and start chopping away. You'll want everything to be in small bite sized pieces. It will resemble a nice chopped salad that your order in restaurants.
For those that don't want it as a sandwich? It also makes a great salad!
And if you've never made your own salad dressing, don't fret. It's incredibly easy and this Caesar dressing of mine is a shortcut version. You simply throw everything in a bowl and mix it up.
Ways to change up this recipe...
1. Change the dressing to any variety! Ranch, Thousand Island, Italian, whichever is your favorite.
2. Serve on sub rolls, pretzel buns or eat as a salad.
3. Add any additional veggies you enjoy. Banana peppers, dill pickles, black olives....all would be fun!
